These are really great planning questions that you're thinking through to best be prepared to squeeze all the magic out of your upcoming trip. My go-to resource for these kinds of details is the
Daily Events Calendar on the Disneyland Resort website.
This page is has a date selector near the top left corner of the page, you can select different areas of the Disneyland Resort with the buttons below the date selector, and then there is a toggle near the top right corner where you can switch between a 1- and 5-day view.
I should note on the front end that these hours are always subject to change, but they typically don't in my experience barring unforeseen circumstances.
The
Grad Nites will be held at Disney California Adventure Park on the evenings of May 28, 29, and 31 so that park closes at 9:00 PM on that night. However it's open until 10:00 PM on May 30 so you'll be able to get an extra hour there on that evening.

Paint the Night are held in Disneyland Park, which is currently scheduled to be open 8:00 AM - 12:00 AM each night within that date range and has two showings of each show planned for each night! Therefore, you should be fine to visit any of those four dates without much interruption and should have plenty of options to see the shows you're hoping for.
