Traveling with dietary restrictions can be challenging. My whole family eats a
plant-based diet, so I'm well-acquainted with allergen binders and analyzing menus at the theme parks. The good news is that Disney has a streamlined process you can use for your daughter, given her several areas of concern.
I recommend emailing the Special Diets Team at Special.Diets@DisneyWorld.com as soon as possible. You can share your daughter's allergies in detail, and they will develop a plan to give you peace of mind during your visit.
After receiving your email, the team will typically send an allergy form to complete. Based on that form, they can even help determine specific dining locations and dishes that will be safe and delicious for your whole family.
You can also review menus online to see a list of allergy-friendly items; these are typically near the bottom. For example,
Tony's Town Square Restaurant is a sentimental favorite of mine, and I see several allergy-friendly dishes listed just past the drink options. It's even broken down by adult and kids' meals!

As for fun snacks, the Special Diets page recommends
asking to see specific packaging to determine if an item is safe for your daughter. Many kiosks and food stands don't offer allergen binders. And since items and their distributors can change, I'm hesitant to recommend any specific meals or snacks. But you'll be in great hands with the Special Diets Team!
One of my family's go-to snacks is the DOLE Whip you mentioned. The original pineapple flavor is plant-based, so it's the perfect way for us to cool down on a warm park day. However, the original version is made with coconut oil and has a tree-nut warning, so please keep that in mind.
