Oh, I am so glad that you asked this question as dietary needs--especially allergies--are so important to enjoying an exciting and safe vacation. Let's talk about your dining options throughout Walt Disney World!
One of my family members has Celiac, and others have tree nut, shellfish, and other food allergies, so I am very familiar with being confident that it is safe for us to enjoy a meal wherever we go. Through lots of research and firsthand inquiries, I've found so many safe and outstanding options throughout the parks, Walt Disney World resorts, and Disney Springs; you'll have so much to choose from!
First, to get more familiar with
Walt Disney World Special Dietary Requests, read through that linked page--especially the What to Know Before You Go section. This will make your dining experiences so much better. The website states that your server will "inform the kitchen to use the allergy request process, which involves a Special Diets-Trained Cast Member" and I can attest that we feel so much more comfortable dining in WDW than we do at restaurants closer to home. We often ask to speak to a WDW chef to ensure that what we're ordering is safe to eat; oftentimes, that chef will not only guide us through the menu, but even add options that they can prepare for our specific needs.
I recommend that you check out dining locations that look interesting, then look at their menus, scrolling down to the Allergy-Friendly sections. Depending on your tastes, you might find some delectable dishes prepared with absolutely no gluten.
Personally, at
Magic Kingdom Park, we love Jungle Navigation Skipper Canteen--especially for GF dining. Their Falls Family Falafel, Orinoco Ida's Cachapas, "Tastes like Chicken" Because it is!, and the decadent dessert Brigadeiro Prestigio are all prepared for those with Gluten/Wheat allergies--and all are delicious. If the Brazilian Cheese Bread is still available, that's an outstanding option, too. For Quick-Service GF options, you can get pizza, chicken strips and fries, mac & cheese, cookies and brownies at Pinocchio Village Haus. Yum!
For GF dining at EPCOT, we love Le Cellier Steakhouse where the filet is the star, but even Poutine and Lump Crab Oscar can be gluten free. Over at Coral Reef Restaurant, you'll find GF Chicken Wings and lots of entree options as well as their GF Chocolate Mousse Bar. When dining at Teppan Edo, our chef prepared our GF family member's meal first, so there was no worry over cross contamination. So, so good!

Nomad Lounge in Disney's Animal Kingdom, GF Mickey-Shaped Waffles at multiple locations (including Grand Floridian Cafe), GF fish and chips plus GF onion rings at Disney Springs'
Raglan Road Irish Pub and Restaurant and even an entire bakery dedicated to gluten free dining:
Erin McKenna's Bakery NYC. There's GF tea service at both
The Garden View Lounge - Tea Experience and
The Cake Bake Shop Restaurant. So. Many. Options!
