I see that you're interested in adding
Disney Genie+ Service to your tickets for your upcoming trip. According to the
eTicket terms & conditions, theme park tickets are nonrefundable, which means you wouldn't be able to cancel them. Additionally, as you mentioned, the Disney Genie+ Service can be added on at the time of ticket purchase or after you scan your tickets the first time to enter a park during your visit.
However, Hakuna Matata, Rosanna! I've been in your situation as well where I've changed my mind and decided to add on Disney Genie+ Service after I already purchased my tickets. While this service is subject to availability and can sell out, that is more of the exception than the norm from what I've seen.
My suggestion would be to plan on arriving at the parks as close to park opening as you're able to on the first day of your visit. Then, as soon as you enter through the entry gate, you can pull up the
Disneyland Resort mobile app and tap the purple Disney Genie+ Service banner near the top of the app's home screen. This will walk you through the purchase process and you'll be able to start using it right away!
