I can't think of a more magical place to celebrate your love than at Walt Disney World, and I love that you are thinking of creative places to have your ceremony. I love chancing across a wedding celebration in the parks, but I can understand how you would prefer a private moment between you and your fiancé.

There are over 40 venues onsite where you can hold your wedding celebration. I couldn't find a fireworks boat option, but I would contact the Fairy Godparents at Disney's Fairytale Weddings and see if they can make your magical dream come true. You do have waterside fireworks options on land in EPCOT proper and the Magic Kingdom Resort area. United Kingdom Lochside looks like an excellent on-land option! The intimate setting has some of the best views of World Showcase Lagoon, and it's tucked away, allowing an element of privacy.

Also, if you are set on marrying on a boat, consider Paddlefish in Disney Springs. Their upper deck has incredible views of Lake Buena Vista, and their event team is adept at elopements! You can preview some of their event spaces on Disney's Fairytale Weddings TV show, as one of the couples used it for a rehearsal lunch!
