Disneyland Resort is no exception, with the wonderful allergy-friendly, plant-based, kosher, and halal menus that are available for guests. Scott, what you can do is email
Special.Diets@Disneyland.com 14 days prior to your arrival (and after making your dining arrangements) so that the restaurants you are dining at have meals ready for you to eat that are gluten-free and celiac friendly. When making your dining reservations online or using the Disneyland app, look for the "special dietary request" option towards the bottom of the menu you are reading, and mark it. When you check in to your restaurant, you can let your Cast Member who is serving know that you have special dietary needs as well.
If you wish to purchase food via
Mobile Order at a quick-service location, you can check the allergy-friendly menu items on your Disneyland app. Select quick-service locations have allergy-friendly menus at this time. You are also allowed to bring in your own food as well.
