Tyler, you'll be happy to know that at ages 7 and 10, your kids are at the perfect ages for a little Disney independence! The
Walt Disney World Resort Property Rules state that any child under the age of 7 must be accompanied by a Guest 14 years of age or older to board an attraction. Since your children are both at least 7 years old, they will be good to go together - with or without you joining them!
My own girls are 3 years apart as well, and this was super convenient when I traveled alone with them to the parks; once the younger one turned 7, it allowed them to ride together and me behind them, rather than one of them riding alone! The Cast Members will often ask you or them to verify their age before boarding to ensure they are eligible, but other than that, you should have no issues with them riding together!
I'd also like to mention that many of the rides throughout the parks can accommodate three to four guests in a row together, so there will also be several opportunities for you all to be seated together!
