My 14 year old is allergic to peanuts/peanut oils. The restaurants sites state you should provide dietary restrictions when you make your reservations. Is there a listing to determine which are "safe" before we make a selection/res plan?

Disney does a great job of working with guests with special dietary issues to make sure that they have an enjoyable, and most of all safe, vacation experience. There is no listing of "safe" restaurants, as Disney endeavors to make every dining experience work for its guests. However, if you read the related post HERE, you will find lots of tips on how to navigate WDW dining with a food allergy.

Good luck and have a great vacation.
