Disney Resort Hotel availability is dynamic and always in flux, mostly because other Guests are making and changing their plans all the time. It's also important to know that Disney blocks a certain number of rooms at each Resort for each
promotion. So, while you might see a room available at its full standard nightly rate, that same room might not be eligible for a particular promotion you are trying to take advantage of. I know that can be disappointing, but that's how the system is set up.
I did some searching based on your arrival date, and I'm currently seeing availability for a 2-bedroom Villa at Disney's Old Key West Resort for the two weeks following your arrival. If you're not seeing availability, it's possible that you are searching under a specific promotion that has more limited inventory available.
As I mentioned, availability does change all the time, so if you aren't able to secure all the dates you want at a single Resort, you might also want to consider a "split stay" where you spend part of your holiday at one Resort and then move to another.
