Walt Disney World Resort does a wonderful job of accommodating guests dining needs. My daughter has a shellfish allergy and my nephew has multiple dietary allergies. Both have no trouble finding a variety of meal options while vacationing at Walt Disney World.
When you are at a counter service restaurant, ask for a menu for Celiac or gluten free options. At table service restaurants, you will want to alert the host or your food needs. The chef will then come to your table to discuss your dining options. You should also note your needs when making your dining reservations.

As for one hotel better than the other, there really is not. All can accommodate your needs and go to a restaurant you want to try or is near the park you are touring.
