I can understand why you have your heart set on eating at
Liberty Tree Tavern. They serve up a traditional family-style Thanksgiving dinner 365 days a year, and the restaurant's menu has hardly changed since its 1971 opening. And let's be honest...the Ooey Gooey Toffee Cake is worth all the calories! My best advice to you is to be persistent since Guests cancel their dining reservations all the time. My sister-in-law swears by the Dining Reservation Finder on touringplans.com, which is a subscription-based website. I've never used it myself, but she claims it has helped her snag some coveted dining reservations.
Although the official Thanksgiving dining locations for this year have not yet been announced, the only other place in Magic Kingdom Park that served a traditional Thanksgiving meal in 2018 was the
Tomorrowland Terrace Restaurant. This is a Quick-Service restaurant, so no reservations would be necessary.
If you're willing to leave the Magic Kingdom for a bit, I'd highly suggest taking the ten-minute boat ride from the Park to
Trail's End Restaurant at
Disney's Fort Wilderness Resort. They typically serve a homestyle Thanksgiving buffet with all the fixings! Also,
Disney's Contemporary Resort is just a quick Monorail ride away and home to two of my favorite restaurants, which usually serve great Thanksgiving meals:
The Wave... of American Flavors (Thanksgiving buffet) and
California Grill (more upscale). Perhaps you could try booking a dining reservation at one of these alternative choices, while you wait to see if a time becomes available at Liberty Tree Tavern.
