You'll be happy to know that none of the Walt Disney World attractions carry a weight limit. However, due to the weight distribution you mentioned, you may need to consider the restraints on attractions. Some attractions utilize lap bars, which your guest may find a little uncomfortable. In
Magic Kingdom, the Haunted Mansion was a bit of a squeeze with someone with a larger belly/chest. Likewise, Big Thunder Mountain Railroad has a lap bar which pulls down on both guests, and may be a bit tight. Seven Dwarfs Mine Train was also a little tight, as the lap bar lays low on the stomach, and can result in discomfort for someone with larger legs and a belly. At
Disney's Hollywood Studios, Rock n Roller Coaster employs an overhead harness and it can be difficult to get out of the limo, for someone of larger size. In
Epcot, Mission: Space has an pull down harness which can be snug for guests with larger upper bodies. At
Disney's Animal Kingdom, Expedition Everest has a lap bar which, like Seven Dwarfs Mine Train, lays a bit low, so keep that in mind. Avatar: Flight of Passage is restricting for guests with a larger upper body and/or calves. They do have a test seat outside to assure that your party will be able to ride without discomfort. Also, Kali River Rapids is snug as it seats two per section, and the belt strap may be a bit short. My suggestion is to try each of the attractions out to see what you and your guests can enjoy, and know which ones are off the list.
