We are going to WDW Oct 11-18. I already made ADRs for each day but figured wrong using the dining plan - we are going to have to pay for 1 meal. Do I need to call the ADR line and let them know that 1 meal we will not be using the DDP?

Not at all. You are always welcome to supplement your dining plan with additional meals or addition items at your dining plan meals. When you are seated at the restaurant, your server will ask you if you are on the dining plan. Simply tell him or her that you are on the plan, but you would like to pay for meal, rather than using your plan credits. When the meal is over, you will be presented with a regular. There is no need to arrange for any of this in advance.

Similarly, even if you are paying for a meal using your dining plan credits, you can still add items such as an adult beverage or appetizer. You will be given a bill for the non-plan portion of your dining experience.
