With the Safari, earlier is better.

Generally the animals on the Safari are most active during the cool morning hours. Once the sun gets higher in the sky and the heat takes over, the animals conserve their energy by resting in the shade. I am on vacation at WDW right now. We spent the day at the Animal Kingdom. The park opened at 8:00 a.m. today and we were on a Safari that started about 8:40. I have ridden Kilimanjaro perhaps 12-15 times over the years. My husband swears that today was the best time ever. We had to stop for several minutes while a rhinoceros walked on the jeep path just a few yards from us. We also had an amazing view of the giraffes grazing just feet away from us. It was great experience.
