We are going to WDW April 9-13 w/ our 2 and 8 yr old. We've purchased the Deluxe DiningPlan. I have booked a few meals, but haven't planned out 2 days of meals. Should I? How hard is it to get into an eating establishment ?

April is a busy month. Without reservations, is not uncommon to face wait times of well over an hour for table service restaurants or even for there to be no walk-ins seated at all.  I would suggest making reservations for meals on every day of your trip. You can always cancel them if you are finding you are over-scheduled or decide you would prefer a counter-service experience.
