  Walt Disney World does an outstanding job accommodating special dietary needs. I have gluten and dairy intolerances, so I love that at Disney I can find options that meet my needs. 
 Almost all of the Table Service restaurants throughout Walt Disney World parks, resorts and Disney Springs offer gluten-free options. You can simply ask the Cast Member when you arrive to provide you with the gluten-free menu. Also, as you are making your Advanced Dining Reservation (ADR) you can notate your dietary needs.  
 Many of the Quick Service locations also have gluten-free options.  
 Some of my favorites include 
Erin McKenna's Bakery NYC, as they have gluten-free cupcakes, doughnuts and cookies. 
Sanaa at Disney's Animal Kingdom Lodge has a gluten-free menu, which includes gluten-free, dairy-free and vegan naan! They even offer a Chai Spiced Tapioca Pudding that is made with coconut milk! 
Pecos Bills at Magic Kingdom also offers a wonderful allergy-friendly menu, which includes chicken/beef/vegetarian rice bowls, southwest chicken salad and allergy-friendly brownies.
