We will be visiting WDW on Aug. 16-23, I was told that I can make dining reservations starting May18 and I am wondering if I can make reservations for the entire week at this time or do I have to call back several days in a row ?

This depends on where you are staying. If you are staying at a WDW resort hotel, then you will be able to make dining reservations for your entire trip 90 days from the beginning of your trip. You will need to have your resort confirmation number so that they can confirm you are an on-site guest.

If you are staying at an off-site hotel or other location, you will need to call back several days in a row. Off-site guests can make their reservations no more than exactly 90 days from the date they are booking.
