We will be visiting MK in October. We are considering the character dining at Akershus in Epcot but we were planning on only buying tickets to MK. Can we visit Epcot for dining without buying tickets to the park? Thanks.

You must have a park ticket to dine at any of the restaurants that are inside the theme parks. This means that to eat at the Princess Storybook meal at Epcot, you would need use a park admission ticket to enter Epcot. A good choice for you might be the Park Hopper ticket which allows you to visit more than one of the theme parks during a day. You can read more about this HERE and HERE.
