Hi, Finbar! I spent part of my summer in Cobh in County Cork! What a beautiful part of the world you live in! You have chosen to come during spring break here in the US, and the week after Easter tends to be really busy at Walt Disney World. Many of the schools are on holiday either the week before Easter or the week after Easter, but colleges and some other schools have breaks schedule through the month of April. I would think, however, you'll see some decline in the size of the crowds after Easter week has passed. In years past, the Easter Bunny has been available at the Magic Kingdom for meet and greets with the children, and there has been an Easter Brunch at EPCOT, however, nothing official has been posted yet for this year. Keep checking www.disneyworld.com for any updates for the Easter holiday.
The good thing about visiting during the Easter holidays is that the park hours tend to be a little longer, because there are more guests to accommodate. And check at your resort, because some resorts do plan events for the children for Easter. My girls have done an Easter egg hunt at one of the Walt Disney World resorts on Easter Sunday.
