Hi, Carolyn! If you were going anywhere other than Walt Disney World, I would tell you that yes, dining will be near impossible. But it's Walt Disney World! All kinds of pixie dust and magic happens!
We travel often with extended family, and that includes vegans, people with gluten allergies, diabetics, people with lactose intolerence, and an allergy to red dyes. We have it all in my family, and I can stay with every confidence that no one has ever walked away from a meal at Walt Disney World feeling like they didn't have options.
The best thing to do is ask for an allergy friendly menu. Most of the restaurants now have them, and they will outline items that are made with specific allergies in mind.
You can ask at any restaurant to speak with a member of the culinary team. They will walk you through the menu (and in the case of a buffet, literally, they will walk you from one end of the buffet to the other) and make suggestions based on your specific dietary needs. In many cases, they can talk to you about making substitutions to menu items that will make them more allergy friendly.
