One reason I love the Walt Disney World Resort is that their dining options take into considerations the many dining needs of their guests. From food allergies to dietary needs to dietary choices, the Walt Disney World Resort restaurant can accommodate a large variety of needs.
You will find a variety of fresh fruits and vegetables throughout the parks and resort food courts to eat. In addition, you can look at menus of the different restaurants to see what menu options there are for your children. The Red Skillet Quinoa cakes at Whispering Canyon Cafe is a favorite of mine. Salads can often be made with out the protein. Buffets have many different food options.
When you make your table service reservations, note on the reservation your children are vegan. In addition, let your server know that they have a vegan request and they can make recommendations on dining. For quick service restaurants, you can ask the cast member at the counter for recommendations as well.

Finally, you can bring food into the park if your children would like to supplement their diets with nuts or other food items.
