I was told today when calling Disney that kids don't count toward room head counts 'til age 3, I thought it was 2. What's right? We will be travelling w/ infant, 2y/o, 3y/o, 7y/o and 2 adults, possibly a 3rd adult, will we fit in Poly. or BW stand. room?

Hi Kristy and thanks for the great question.  You were told right by Disney, children do not count until age 3, so enjoy having what sounds like, two, that you will not have to pay for on this trip.  Isn't that a great thing?
When you call to book your room, they will count the 3 year old and on up.  A party of 5 can fit in the POLY and the BW, and your CM should be able to tell you if your party will fit in one room or if you will need to book two rooms.  I am not sure what they will do with three adults and 4 children (even with two under the age of 3), but I know the reservationist will be able to give you a definite answer.  Thanks so much for the great question and I hope you all have a wonderful trip to WDW.
