I'm probably the world's pickiest eater and I have dietary restrictions to boot, so I can definitely reassure you on your dining needs at Walt Disney World (WDW).
I find WDW to be the most accommodating place in the world for modifying dishes to meet guest's needs. At most Table Service restaurants you can speak with the server about substituting side items to meet your needs. Most times they can accommodate the request.
You can book your
Advanced Dining Reservations 180 days in advance on the Walt Disney World website. You can also notate any food allergies or special dietary requests when booking. The menus for all of the restaurants are also available online so you can check it out ahead of time.
For fussy eaters, I highly suggest dining at all-you-care-to-eat buffet locations, as you can pick and choose exactly what you want. Many of the buffets have "plain" foods, among the speciality items, so you can choose chips, plain chicken, simple broccoli and other basic items.

Crystal Palace for their varied selection.
For this reason, I highly suggest the
Disney Dining Plan. You will definitely be able to find dining options that your entire family will enjoy.
