Disney Magic are certainly welcome to come and go from the ship as they please throughout the day in each port. However, I noticed that your itinerary includes just two ports of call: Disney's Castaway Cay and Grand Cayman. I assume you're asking about Grand Cayman for the outside activities that you mentioned. Do be aware that Grand Cayman is a port that requires tendering. The Magic will anchor out in the bay and guests will have to take smaller tender boats from the ship into the dock area. This adds some extra time to debarkation and embarkation, so once you're off the ship, plan to stay in the port until you're ready to come back for the day, as it's not quite as easy to come and go from the ship as when it docks in another port.
You're welcome to book outside tour companies for your day in Grand Cayman, but I'd like to recommend that you at least check out the
Port Adventures that Disney offers there. Especially with a tendering port like Grand Cayman, they take the stress out of planning and timing with the tenders, and you simply meet your group and guide onboard, and tender to the dock together where you are whisked off on your magical adventure. Should you run into a delay, they're in contact with the ship so they won't leave without your group! If you book a tour on your own, plan to be back with more than enough time to get through security at the port and wait in line to take the tender back, as the ship will not be aware if your private tour is running late.
To get off and back onto the ship, each guest, including children, need to scan their Disney Cruise Line Key To The World Card, and all adults should carry photo I.D.
