I think my kids might be too young (3 & 7) to enjoy much of World Showcase so I was wondering what else there is to do in Epcot after 7 p.m. when Future World closes? We will be taking in the Illusions show which doesn't start until 9 p.m.

    Tracey,

You might be surprised by what World Showcase can offer your kids.  There are some really cool experiences and performances there!  The best website I've found to detail the opportunities is http://pages.prodigy.net/stevesoares/.  Just click on the Epcot link at the top of the page and you'll be able to view a list of the offerings in each country so you can see what might interest your children.

Beyond that, have you heard about the Kidcot Fun Stops in Epcot?  Look here for more information on those.  They are a great way for your kids to learn a little about each country in a fun way.

And an old standby tactic that we use with our own kids...boat rides!  Both Mexico and Norway offer boat rides in their respective pavilions, so be sure to enjoy those while you wait for Illuminations to begin.
