I have a great dining suggestion for Hollywood Studios! My family absolutely ADORES the
50's Prime Time Cafe! No stuffed characters, but servers with a lot of character! It is fun, the food is great American comfort food, and the setting if very kitschy!
As for the Magic Kingdom, consider leaving the park briefly to go to
'Ohana for dinner. No characters again, but wonderful for a family, and a great view of the fireworks if you get a main room table. Within the park you might like
Liberty Tree Tavern.
At the Animal Kingdom I would try
Yak and Yeti, as well as
Tusker House, for lunch or dinner. The latter is a buffet, and more kid-friendly. But the Y&Y has a great range of exotic choices.
Finally, I think you should definitely consider the Halloween party. It is a fun night, if it is within your budget!
