When you're staying at a Disney resort and you purchase a package with park tickets, you can choose to add the Disney Dining Plan for your entire stay. You can select park tickets for less or more days than you're actually staying at the resort, but if you choose to add the Dining Plan, you'll receive dining credits for every night of your stay. So, for example, if you're staying at a Disney resort for three nights, you can choose to buy a one-day park ticket, but if you want the Dining Plan, you'll purchase it for all three nights.
One caveat I should mention is that the new
Memories Vacation Package special offer that includes the Free Dining Plan requires you to purchase at least a 2-day park ticket. If you're not booking that particular package however, you're usually able to purchase a one-day park ticket and then add the Dining Plan for the length of your stay. In general, it's more cost-effective to purchase park tickets with more than one day since "the more you play, the less you pay" per day. However, the one-day park ticket can be useful when you're splitting your stay between two resorts and you want to have the Dining Plan for your entire stay, since you can't purchase the Dining Plan without purchasing park tickets too.
