Hi Kristy,
Disney has done a good job of making sure guests have access to the foods they want and need. They can accommodate most requests with time and planning.
At Disney World, many restaurants change their menus with the season and this is especially true with the table service meals. While favorites are generally on a menu, a seasonal dish or two will rotate on the menu. Your best bet is to email the cast members at
Special Diets at least 14 days prior to arrival to obtain a list of menu items. You can reach them at Special.Diets@DisneyWorld.com.
In addition, you should note your gluten request on your advance dining reservations so a chef will visit your table to provide options. In addition, at counter service restaurants, you can mention your gluten request and a specially trained cast member will work with you on your dining selection.
Wishing you a magical vacation!
Beth
