We will be staying at WDW for 10 days, but only have park tickets for 6 days. Can we use our tickets on days of our choice or do we have to use them in order from the day we arrive? Like if it rains on the second day of arrival, we wouldn't wantto use one

If you are purchasing 6-day Magic Your Way tickets, then your tickets won't expire until 14 days after the first day of use.  You can use them on any 6 days you like during that 14-day window.

In your example, if you go to a park on the first day, and then skip the parks the second day, you will still have 5 park days remaining on your tickets.

One comment on your example... Often the parks empty out fast on rainy days, and the rain doesn't usually last too long.  So if you dress appropriately, the rainy days can actually be great days to enjoy the parks with relatively fewer guests.  Just something to consider! ;-)
