We are staying at Pop Century in July. My questions is we have our own mini fridge.. is it against policy to bring our own fridge instead of renting one? We would like to save money, since strollers are so expensive.

There is no policy against bringing your own small refrigerator to the Pop Century resort. This is a fairly common practice.

If you're looking to economize, I would STRONGLY suggest that you also bring your own stroller to WDW. As you suggest, the WDW rental strollers are expensive. Another drawback is that the rental strollers can only be used in the theme parks. I find that there is so much walking at the resorts and other areas of WDW, that a having your own stroller is invaluable throughout the vacation. Additionally, the WDW strollers are not plush and can be uncomfortable if you're planning to have your child nap in one.
