Hi Sean! Welcome to the Disney Parks Moms Panel.
I think you will really enjoy your stay at
Disney's Port Orleans French Quarter. This resort is a bit more compact than others, so you will never be more than a quick stroll from the pools, transportation, and most importantly, those beignets! My favorite amenity of this resort is Boat Transportation to Disney Springs. You will also be a short walk or boat ride from Disney's Port Orleans-Riverside, with additional dining and recreation options.
Exploring the wonderful Walt Disney World Resorts is a great idea. I recommend choosing a group of resorts that are near each other. I thought of two tours for you. For the first, travel by bus from Disney Springs to Disney's Wilderness Lodge. From there, you can boat to Magic Kingdom and hop on the Resort Monorail to tour Disney's Contemporary, Polynesian Village (visit Pineapple Lanai here for tasty treats!), and Grand Floridian Resorts. To return to your hotel, take a bus from Magic Kingdom. For the second tour, take a bus from Disney Springs to any Epcot area resort. These include Disney's Yacht Club, Beach Club and BoardWalk Hotels, as well as the Walt Disney World Swan and Walt Disney World Dolphin. These resorts circle the lovely path around Crescent Lake. For some extra fun, rent a
Surrey Bike for a spin around the lake. If you end up here closer to evening, stick around for the BoardWalk Buskers entertainment. Returning to your home Resort from here will require transferring at a Theme Park or Disney Springs. For expedited service, you may want to consider
Minnie Van service.
