You've asked a great question, and in my opinion, you've planned for the perfect amount of park time for your length of stay. With four days in the parks, you are going to be glad to have two rest days to enjoy your resort and some non-theme park activities.
I know when my kids were five they could have spent all day swimming even when we visited in the cooler months since the pools are heated. Disney's Art of Animation Resort has three fabulously themed pools including my favorite, The Big Blue Pool! There is also an adorable playground to explore, Squirt's Righteous Reef, bike rentals and the Pixel Play Arcade. I highly recommend a full day to enjoy all the fun at this resort!

Disney Springs? There are so many wonderful dining options, entertainment and shopping including a Lego Store that I definitely think is worth a visit. This area also has an AMC Movie Theater, bowling at Splitsville Luxury Lanes and a Bibbidi Bobbidi Boutique where your prince can be transformed into a dashing knight!
Another fun idea is to plan a Character meal like Minnie's Beach Bash Breakfast at Cape May Cafe at Disney's Beach Club Resort or a dinner at Chef Mickey's at Disney's Contemporary Resort. Also, all the moderate and deluxe resorts offer a nightly campfire to roast marshmallows followed by a Movie under the Stars (you can check at your resort for the nightly schedule). Disney's Boardwalk area offers surrey bike rentals and my favorite ice cream on property, Ample Hills Creamery! This might be fun to explore after a meal at Cape May Cafe.
My kids always love to rent the Sea Raycers that are available at marina locations around property and play a round of putt-putt at Winter Summerland Miniature Golf.
