Is the staff at geographical themed resorts from related countries? Like animal kingdom staffed with citizens of Africa?

It is often the case that the staff at various geographically-themed places at WDW is actually from the represented geographical area. This is particularly true at Epcot. All the restaurants in the World Showcase countries are well staffed with servers from those countries. Also, most of the workers in the World Showcase retail shops are from the represented countries. I had dinner at the Via Napoli restaurant in the Italy pavilion at Epcot a few weeks ago. I enjoyed the service from the very attractive Italian waitstaff almost as much as I enjoyed the pizza. :-)

You will also find that many, but not all, of the cast members stationed in the Africa area of the Animal Kingdom theme park are actually from Africa. They are happy to share stories of their home land with you. I have not often found native Asian staff in the Asia section of the Animal Kingdom.

It is also less true that you'll find native staff in the WDW resort hotels. I have stayed at the Animal Kingdom Lodge three times and eaten in the restaurants there at least a dozen times. I have encountered a few native African cast members there, but not nearly as many as I have met in the Animal Kingdom theme park.

I think the geographically-themed resort where you're most likely to find native staff is at the Grand Floridian. You'll find plenty of cast member there that are well able to represent their home land of Florida ;-)
