Welcome to the Disney Parks Moms Panel, Rachelle! I remember when seeing the princesses, every single one, was the top thing on my daughter's "must do" list for visiting the parks and resorts!
I believe you must be thinking about Disneyland Park in California, where the castle is Sleeping Beauty's castle. They have a really fun walk through of that castle that immerses guests into the story of Princess Aurora. However, at Walt Disney World in Florida, the big castle is Cinderella Castle. But, Aurora can often be found inside Cinderella Castle if you make dining reservations for Cinderella's Royal Table where you'll get to meet quite a few of the Disney princesses.
Aurora is also available for meet and greets in Princess Fairytale Hall off and on throughout the day. A few different princesses meet there, so be sure to check before getting in line to find out which of your favorites are greeting their guests at that time!
Over at Epcot, you can meet Aurora at
Askerhaus Royal Banquet Hall as you dine inside this castle-like setting too! Occassionally she's out meeting in France in Epcot, but I haven't seen here there recently, so check the park guide when you arrive.
If you're looking to really treat your granddaughter, make reservations for
Disney's Perfectly Princess Tea. This is a true memory maker, because your little one will be treated like royalty at this tea party themed around Princess Aurora. Briar Rose herself will even make an appearance to greet guests during this event with sing-alongs, parades and stories. It's really a special time! Included in the cost of this tea for the girls is a Princess Aurora doll and other princess gifts.
Happy planning, Rachelle!
