I am a single mom and will be going to WDW with a 8yr old and a 3yr old. My oldest wants to ride the bigger rides. Is there a way that I will be able to make sure my youngest is taken care of while I go on the bigger rides with my oldest.

The only way for you to do this would be for you to hire a sitter. Disney contracts with several independent babysitting services that receive rave reviews. You could have them come to your room to watch your three year old while you and your older child hit the big kid rides, or you could hire them to accompany you in the park for several hours as a "mother's helper," perhaps taking the preschooler on an easy ride while you go on a roller coaster with the older child.
