We have reservations at Whispering Canyon Cafe and 1900 Park Fare and I read how to get to both from Magic Kingdom. If we aren't in MK on the days that we have those reservations (no park hopper), can we still get to each by taking a bus to MK 1st?

Hi Natalie! You sure can! The bus stop, boat dock, and monorail station are all located just outside the entrance to the Magic Kingdom park so you won't need your park ticket to use the Disney transportation. If you're heading to your dining reservations from your resort, you can take the bus to the Magic Kingdom and then hop on the boat to the Wilderness Lodge for Whispering Canyon or the monorail or boat to reach 1900 Park Fare at the Grand Floridian. If you're visiting one of the other Disney parks before your meal, there's no need to go to the Magic Kingdom first; you can just take a bus from the park straight to the Wilderness Lodge or Grand Floridian.
