Disney Parks Blog a couple of years ago, including the "Floridian Express" tour you mentioned. I understand your disappointment, as I know you are looking forward to doing something for your special celebration.
My husband is a big fan of Disney history himself, and he recently watched a video online about the Walt Disney World Resort hotels.
Disney's Grand Floridian Resort & Spa, which opened in 1988, has its own unique story, and there are a handful of internet articles that will also give you details. I'd also encourage you to speak with the Cast Members at the resort as they have vast Disney knowledge that you'll never find online. I'm always on the lookout for Hidden Mickeys, and the last time I stayed there, a Cast Member from Bell Services took the time to show me all the fun ones in the decorative tile inlay and glass ceiling domes in the main lobby. Speaking of the main lobby, I'd highly recommend listening to the Grand Floridian Society Orchestra. They play a mix of ragtime, traditional jazz, and favorite Disney tunes several times every evening.
