Personally, I don't feel that the
Disney Dining Plan (DDP) is confusing at all, actually quite the contrary. I book the Disney Dining Plan every time I visit because I feel that it saves us time money and stress.
The basic Disney Dining Plan includes one table service, one quick service and one snack per guest, per night of your stay. Many of the restaraunt are covered under the DDP and most menu's even have a cheat sheet that lists if an item is covered under the plan. For example, if you visit Pecos Bills in the Magic Kingdom, it is covered under the DDP. You can order any drink, entree and dessert from the menu. If you eat a Table Service meal, it is equally as straight forward. For example, at Ohana, they even go so far as to just bring out your all-you-can-eat selection to the table, including drinks, meal and dessert.
The only thing that can be slightly confusing is understanding what snacks are covered. As a general rule, all snacks that are under $4.00 and are a single-serving are covered under the plan. This includes frozen ice cream bars, popcorn, a whole piece of fruit or a drink.
And there is no problem swapping a dessert for a piece of fruit instead. I always trade in my dessert at Pecos Bills for extra grapes and I stash them in my bag for a healthy snack for later.
