Disney's Coronado Springs Resort is one of my favorites at Walt Disney World Resort, and definitely my top choice of the
Moderate Resort Hotels. I stayed in the Gran Destino Tower on my first-ever solo trip last year and truly loved everything about it. The tower design and décor are a nod to "Destino," a short film started in partnership by Walt Disney and Salvador Dali in the 1940s. You'll find it playing once you arrive in the vibrant lobby, and notice its subtle artistic touches amidst the beautifully decorated rooms and grounds, as well as in some of the many dining options across the resort. I especially love that the tower rooms offer Deluxe Resort vibes at a Moderate price point.
If you're hoping to enjoy a belated birthday dinner, I'd definitely recommend
Toledo - Tapas, Steak & Seafood. I'll also be enjoying a birthday visit to Walt Disney World Resort in September, and this restaurant is one of the final contenders for my birthday dinner. The Chef's Signature Dinner for Two features four courses including a progressive dessert that's just calling to my tapas-loving palate. If we decide to celebrate there, I'll try to time our dinner so we can enjoy a glass of wine at
Dahlia Lounge afterward with a view of the EPCOT fireworks. Toledo and Dahlia Lounge are both located on the 16th floor and offer sweeping rooftop views- perfect for a romantic dining experience or after-dinner cocktail. By the way, if you find time to watch "Destino" before your visit, be sure to look up and find the dandelions featured in the film as light fixtures inside Dahlia Lounge. If you happen to be staying in a Club Access room or suite, you'll notice The Chronos Club is named for the other character featured in the film's love story.
I'd also like to suggest a few activities I, unfortunately, didn't get to experience for myself on my last visit. First, you'll want to spend some time at
The Dig Site featuring The Lost City of Cibola Pool as well as the largest hot tub on Walt Disney World Resort property. This would be a great spot to soak off all those miles walked in the parks. Second, consider the
Colors of Coronado Painting Experience which is currently scheduled on Friday afternoons. As an art lover, I think this would be a really fun activity and a great hands-on custom souvenir to bring home from your birthday celebration. If you're not feeling artistic, perhaps
Sangria University might be your cup of tea- or in this case, wine. This weekend mixology class is a great value and from what I've heard, a
ton of fun!
One last tip- Coronado Springs is a large resort that also features several other Southwestern and Mexican-inspired guest areas. If you'll be staying in one of the Casitas, Ranchos, or Cabanas rooms you'll want to note the nearest bus stop and pick-up/drop-off order if you plan to visit the parks during your stay. During my visit, Gran Destino Tower was the last pick-up and drop-off, but this is subject to change.
