    I purchased a 5 day ticket with water park option, but NOT a park hopper. Can we visit the theme parks in the morning, and in the evening go to the water parks for the 5 days?

    Yes. The theme park admissions and the water park admission are not related. You would need a Park Hopper to go to more than one of the four WDW theme parks per day. However, you are welcome to go to one theme park and a water park during the day if you have the Water Park Fun & More add-on to your base ticket.
