The answer to your question is yes and no. All Walt Disney World theme parks have ticket windows that sell tickets
when available. So yes, in theory, tickets can be purchased at the gate. However, I do not recommend waiting until you are at the gate to purchase your tickets.
To manage theme park attendance, Walt Disney World Resort has introduced the
Disney Park Pass reservation system. To enter a theme park, all Guests ages 3 and up must have both a Disney Park Pass theme park reservation and a valid admission ticket. I see you are interested in visiting next week. I just took a look at the
Theme Park Reservation Availability Calendar, and some dates are showing that some parks do not have any Disney Park Pass availability. If reservations for that park are unavailable, you will not be able to purchase a ticket at the gate. It would not be very magical to arrive at a park, only to find out you will not be able to get in.
I recommend
purchasing your tickets on the Walt Disney World website and then immediately making your Disney Park Pass reservations. If your preferred theme park does not have reservation availability, you might consider purchasing a ticket with the
Park Hopper Option. This way, you could make a reservation for whichever theme park has availability on your chosen date, and then "hop" over to a different park after 2:00 pm when park hopping hours begin. (Subject to theme park capacity.)
