If I purchase a magic your way base ticket for 7 days and will only be at wdw for 5 days, can we use the two extra days to visit multiple parks in one day?

No. If you want to visit more than one of the Disney theme parks in a single day, then you must purchase a Park Hopper ticket. All admission tickets are computer coded for a number of days, not a number of park entries. If you try to enter a second park in single day with only a base ticket, the system will flag this and you will not gain entry to the park.

To meet your needs, you should purchase a 5-day Park Hopper ticket.
