Disney does a great job of helping people with
special dietary needs, including gluten-free diets. I have a daughter with a tree nut allergy, so I am versed in working with them on special requests, and they have always gone that extra mile to make my daughter feel welcome and appreciated.
What I recommend you do is have them tag your reservations with this dietary request. That is a start. Then e-mail specialdiets@disneyworld.com and tell them of your request. They will take it from there. Make sure you give them at least 2 weeks.
What typically happens is they will reply with questions on your request. You can also anticipate a visit from the chef at your table service restaurants to review what is gluten free, and what is not.
BOTTOM LINE: Disney will accommodate your needs and reasonable requests in a way that will make you feel good about visiting there. But you have to tell them what you need/want, so that they can help.

Babycakes NYC. They are proof that gluten-free does not mean flavor free! Yummy!
