    Hi, Hannah!  What a wonderful and generous gift from your parents! 

    Let's start with your Jedi loving little guy.  You might want to look into Jedi Training Academy, but I must warn you, this is not something you book in advance, and it's first come, first served.  Head first thing in the morning to Disney's Hollywood Studios, and you can sign up for one of the training sessions held through the day.  The program does fill up, so the earlier you get there, the better.  There is usually a sign at the Sounds Dangerous attraction directing you towards the sign ups.  There is no cost for this except admission to the theme park.

    Something your son and your Mum might both enjoy is the Behind the Seeds tour at EPCOT.  This takes you through the greenhouses a the Land pavilion, and gives you an up close and personal look at the fish and alligators being raised on property.  This is $18 for adults and $14 for children, plus theme park admission.

    For about $27, your son and your Mum might enjoy the Family Magic tour at the Magic Kingdom.  Run a bit like a treasure or scavenger hunt, you go through the Magic Kingdom to each of the themed lands.  The tour usually ends up with a meet and greet with a favorite character.

    Just for Mum, you might want to look into a spa treatment - manicure or pedicure is well within your budget.  It's a nice way to relax for a while on her own.  Or treat her to tea at the Grand Floridian Cafe.

    There are also catch and release fishing opportunities available at Port Orleans and Ft. Wilderness.  Both are great fun for young children!
