I am planning our trip to WDW in April. I was wondering if we were able to take snacks and water bottles in the parks? Also, do the kids meals come with a toy or something to take home for a souvenir?

You are allowed to bring snacks and water bottles into the parks. I have done this myself on many occasions.

The vast majority of kids meals at the parks do not come with take-home souvenirs. There is a McDonald's in Downtown Disney that will give the standard McD's happy meal prizes, but these are not specifically themed to WDW. While there are usually no kids' meal giveaways, often the children's meals are served in a themed container. For example, many of the children's sandwiches in theme parks are served on a Mickey-shaped tray, with the side dishes going in the ears. The snack bar near the Yacht and Beach Club pool serves it's kids' meals in plastic sand buckets. My kids love saving these and bringing them home.
