We are planning to travel w/ my 1y/o girl... We would like to stay somewhere we can go back and forth to the resort if permited as needed... my baby has mild hypoglicemia and requires a nap in order to remain estable... We are going to Epcot... Any ideas?

If Epcot is the park you will be visiting most often, the closest hotels would be the Yacht and Beach Club and the Boardwalk Hotel. These are both easily reached on foot with only a 5-10 minute walk from the International Gateway exit in the World Showcase at Epcot.

If you were to be visiting the Magic Kingdom most often, the most convenient hotels for you would be those on the monorail line: the Contemporary, the Polynesian, and the Grand Floridian.
