Tamra, I like the way you think.
When I am planning my theme park days, I want to maximize my ride time and MINNIE-mize the amount of time that we spend in line, so I always aim for the least busy days.
While everyone may have a slightly different method to their madness, I can tell you what I would do in this situation. First, I would absolutely go to Magic Kingdom on a weekday. Since Disney's Animal Kingdom has a little larger footprint, it often feels less crowded, so I think that a weekend would be fine.
Did you know that you will be visiting during the
Taste of EPCOT International Flower & Garden Festival? This festival tends to get a little more crowded on the weekends, so I would recommend that you aim for Sunday or visit during the week if at all possible.
Now I am sure you have heard how AMAZING Disney's Hollywood Studios is. With all the
new attractions and amazing
immersive lands, this park tends to sell out of Disney Park Pass system reservations pretty regularly, so it may not matter quite as much if you visit on a weekend or a weekday in terms of crowds.
If you are aiming to maximize your ride-time, my number one tip is to get to the theme parks early as that is when lines are the shortest. We then tend to take a mid-day break to either head back to the hotel or to have a
fabulous sit-down lunch. Once crowds clear out a bit in the evening, wait times once again get low and you will be surprised how much you can get done in the hour before the park closes.
