There are more activities than I can fit in to one answer here, but I have a few ideas that might help. But first, let's tackle the parking and transportation issue.
When you arrive go straight to
Disney's BoardWalk and park there for your breakfast at
Trattoria al Forno. While the Boardwalk really comes alive in the evening, in the morning it can be a bit sleepy, so your best bet is to rent a
surrey bike and explore.
After breakfast, I would suggest you move your car over to the complimentary self
parking at
Disney Springs. Then when it is time to head for dinner over at
Chef Mickey's at
Disney's Contemporary Resort, you could either move your car over if you have a dinner reservation, or you could bus there and back to Disney Springs to gather your car and head home.
But what to do between breakfast and dinner? There are many choices, here are a few of my favorites;
