we are planning to go the week of thanksgiving or the weekend before thanksgiving. which time would be less crowded

The rule of thumb is that if schools are out, Disney World is crowded. Usually this means that holidays are more crowded than any other time. The further away from the Thanksgiving Wednesday through Sunday you can get, the lower crowd levels you will experience. If avoiding crowds is your goal, then I would stick with the weekend before Thanksgiving.
