We were planning on getting the deluxe meal plan because it fits more with the dinning style we like. What I was wondering though is if we can use a sit-down meal as a quick service meal while we are in the parks? Do we have to change them in advance?

Hi Rebecca! On the Disney Deluxe Dining Plan, you receive three meals a day in addition to two snacks and the refillable resort mug.  You can use the meal credits at table-service or quick-service restaurants. Of course, you'll get the biggest bang for your buck if you dine at the table-service eateries, but if you just want to grab a quick meal at a counter-service spot, you could redeem one of your meal credits there -- no advance planning required! The Deluxe Dining Plan is super flexible. You can see all the details by clicking here

If you're in a park and find yourselves wanting a quick meal on the Deluxe Dining Plan, my suggestion would be to first see if you could walk in to one of the buffets without a reservation. You can eat quickly at a buffet, and you'd find a much larger variety of food selection than at most quick service restaurants.

Hope you have a wonderful time!
